12 Days of hors d’oeuvres and cocktails: Day 2

Thai Spiced Shrimp with Coconut Dipping Sauce and a Terrace Tonic

When I am at home in Minnesota, I spend a lot of time with my friends Jenn and Allison. I consider myself unbelievably lucky to have such wonderful women in my life. I have felt even more lucky in the past year because they have made the long trek to visit me in Tokyo. It is an amazing thing to have people who care about you enough to travel thousands of miles to see you.

Allison is here now with her husband Adam and we are having a blast. Karaoke last night, Kamakura today, and a lot of laughs in between. It has truly been a thankful Thanksgiving week for us here at Tokyo Terrace.

When we are not in Tokyo, Allison, Jenn and myself often find ourselves sitting on someone’s patio enjoying a glass of wine or a cocktail together. This cocktail makes me think of days spent with my closest friends, enjoying fresh flavors and fun conversation with two people who know me inside and out.

For the “12 Days” project, I couldn’t help but add this cocktail to the list. It works perfectly with Debi’s Thai Spiced Shrimp. Basil is a classic flavor in Thai cuisine and pairs nicely with the coconut dipping sauce. This drink is easy, beautiful, and delicious. The perfect way to bring an exotic feel to a holiday party!

Terrace Tonic
makes 1 cocktail

1 tablespoon granulated sugar
1 teaspoon lemon zest
1 tablespoon chopped basil leaves
2 shots vodka
Tonic Water
Ice cubes

Combine the sugar, zest, basil leaves and vodka in the bottom of a glass. Using a spoon, smash the ingredients together to release and meld the flavors. Add the ice cubes and top with the tonic water. Garnish with a slice of lemon.
